Dill Sauce - 3, with Sour Cream

This is a quick and easy sauce, a little naughty but nice! Serve it with grilled salmon or other fish and fish burgers. It is also very good on Jacket Potatoes and served as a side sauce with steak and other grilled meats. You can add chopped chives or other herbs, instead of dill, when serving with meat. Serves 4

Ingredients

  • 200 ml. fresh or good quality mayonnaise

  • 200 ml. sour cream or cre fraiche

  • 18-20 gm. or 1 small bunch of dill, washed and finely chopped

  • A good sprinkle of rock salt

  • A good sprinkle of black pepper

  • 1-2 cloves of garlic, peeled and crushed (optional)

  • 2-3 medium tomatoes, seeds removed and flesh chopped into small pieces

  • 1 tbsp. chopped green chillies (optional)

Instructions

  1. Place all ingredients, except tomatoes and green chillies, in a small bowl and mix gently. Chill covered for an hour or two, to let the flavours absorb.

  2. Add tomatoes and chillies just before serving. Serve chilled.
