Bhindi Bhaji Ki Sookhi Sabji/Bhaji In Air Fryer

This is an quick and easy dish to make in an air fryer. Fresh or frozen Okra /Ladies Fingers can be used, I have used frozen ones in pictures here. Sometimes, I add a teaspoon of a pickle to it, I make it at home Lemon Pickle. You can add a little bit of another pickle of choice. If adding pickle, reduce the quantity of salt listed in the recipe.

Adding tomatoes and onions is optional, I make it both with and without these. To me, vegetables taste better without them.

Serves 2

Ingredients

  • 200 gm. Okra or Ladies Fingers of any type

  • 1 tsp. grated or frozen ginger

  • 1 small onion, peeled and thinly sliced (optional)

  • 1 medium sized potato potatoes, washed well and chopped (optional)

  • 1 tbsp. cooking oil (mustard oil tastes better, if you can find it)

  • 1 tsp. cumin seeds (change flavour by trying with mustard seeds or Panch Pooran

  • 1/4 inch piece ginger, peeled and finely shredded (optional)

  • A small lemon pickle, mashed roughly

  • 1 tsp. coriander powder

  • 1/2 tsp. turmeric powder

  • 1/4 tsp. chilli powder (adjust to taste)

  • 1 1/2 tsp. salt (adjust to taste)

  • 1/4 tsp. coarsely ground fennel seeds (optional)

Instructions

  1. Wash potatoes, cut into small pieces, so they cook fast. Bhindi cooks very fast, you don?t want it to overcook while waiting for potatoes to cook. Half cook the potato in microwave first. I cook for about 4 minutes. Peel and chop into small pieces.

  2. Place both the vegetables (or bhindi alone) in a bowl and add all the spices listed, salt,, oil and mashed lemon pickle.

  3. Mix well.

  4. Place in your air-fryer bowl and cook for 4 minutes.

  5. Take the basket out, stir vegetables and cook again for 2-3 minutes, until vegetables look and feel cooked. Do not overcook. It is to avid overcooking that I take out halfway, stir and then decide how many more minutes.

  6. Adjust seasoning, take out in a serving bowl.

  7. Serve with any Indian meal.
