Note from Mamta: It is very commonly used Indian home remedy for coughs and sore throats. Children love it, because it doesn't taste like medicine. Lemon juice is an optional extra. This is something we were given by our mum since we were children. For us, fresh honey was the attraction.

Our father used to have it extracted from wild honey bee hives. The hives were invariably discovered on a high branch of some large tree in the garden. I remember our old gardener Jamuna (he was young then), smoking the bees out first. Then he would wrap his head, face and hands in cloth (there were no gloves then) and climb the tree. He would bring the hive down. It was then cut up and juice extracted, which my mum then kept in jars, sharing some with him and friends. That was one of the best honey I have ever tasted!

Ingredients

  • 2 inch piece of ginger root, giving roughly 15 ml. freshly extracted ginger juice

  • 15 ml. honey

  • 15 ml. lime/lemon juice (optional)

  • A sprinkle of finely ground pepper is and additional, optional ingredient

Instructions

  1. Peel and grate ginger finely.

  2. Press through a fine sieve using a spoon or clean fingers. Keep the pulp aside for cooking use.

  3. Mix ginger Juice, honey, and lemon juice if used, together. Mix well.

  4. Keep refrigerated in an airtight jar.

  5. Have one 5 ml. spoon when required. Stir well before each use.

  6. It can also be added to hot water and drunk as a soothing drink.
