Clear Mushroom Soup

This is an easy and tasty soup to make. You can add a little chilli sauce or one sliced green chilli to it, if you like your soups hot. Serves 2


  • 200 gm. fresh mushrooms of choice, cleaned and thinly sliced

  • 1 tbsp. oil

  • 1 small onion, peeled and finely chopped

  • 2 large cups water

  • 1 tbsp. vegetable stock granules. I generally use Marigold vegetable Bouillon mix.

  • 1/2 tbsp. light Soya sauce or Maggie seasoning sauce

  • A good sprinkle of freshly ground black pepper.

  • Salt, only if needed


  1. Heat oil in a pan. Saute onions until transparent.

  2. Add mushrooms and stir-fry until they leave water.

  3. Add water, bring to boil.

  4. Add all other ingredients and mix.

  5. Adjust seasoning to taste.

  6. Serve piping hot.
