Sausage Curry With Pre-fried Onions Sauce

One day, I had a few sausage leftover, so I decided to make a sausage curry. We have lamb/beef/ pork meat ball curry, so why not a sausage curry. You can use any type of sausages you like, even vegetarian ones. Here I have used Sainsbury's Butchers Choice Sausages, cooked in a Basic Curry Sauce 6 made with pre-fried onions, but you can use any curry sauce you like. I have 6 different curry sauce recipes on this website.

Serves 4

Ingredients

  • 6 average sized sausages (approximately 450 gm.), cut into 4-5 pieces each*

  • 1 tbsp. oil of choice. Pre-fried onions release oil too, so do not use too much.

  • 1 tsp. black mustard or cumin or nigella seeds

  • 1 tsp. grated ginger

  • 1 tsp. grated garlic (optional)

  • A few curry leaves (optional)

  • 3/4th cup pre-fried onions

  • 1 cup fresh chopped or half a tin of tomatoes

  • 1 tsp. turmeric powder

  • 1 1/2 tsp. ground coriander seeds

  • Chilli powder to taste

  • Chopped coriander leaves, a handful

  • *Instead of cutting the sausage into pieces, you can peel off the skin and make small balls from the sausage meat.

Instructions

  1. Heat oil in a pan.

  2. Add cumin/mustard seeds or any other seeds you want to temper your curry with. Wait for seeds to crackle.

  3. Add ginger, garlic, curry leaves. Fry for 20-30 seconds.

  4. Add tinned or chopped tomatoes (tinned are faster to cook), pre- fried onions, spices and salt.

  5. Stir fry for a couple of minutes.

  6. Add sausages and stir them in for a few seconds

  7. Add water, enough to make sauce of a thickness/consistency your like. Bring to boil. Simmer until sausages are cooked through.

  8. Garnish with coriander leaves and serve hot with Boiled Rice or Nans.
