Broccoli Soup

A simple broccoli soup, served with a warm slice of freshly baked bread, is delicious on a cold winter morning. Give it a try, it is so easy to make. Serves 4-5
Ingredients
300-325 gm. broccoli
1 onion
A small piece of ginger
1 tbsp. olive oil
1 tsp. butter (oil for vegans)
250-230 ml vegetable stock *
A few Basil leaves (optional)
A little freshly ground black pepper or a little chilli sauce
Garnish; a finely chopped green/red chilli or a few cress/mustard leaves or a sprinkle of paprika.
*Vegetable Stock: I make it with good quality vegetable stock cubes or with a stock mix mostly, but you can make your own by simmering a few vegetable peels, or surplus vegetables in a pressure cooker for a few minutes. Strain and discard solids.
Instructions
Peel and chop onion and ginger. Clean and chop broccoli.
Heat oil and butter in a pan. Fry onions and ginger until soft, but not browned.
Add broccoli and stir-fry/cook for 10 minutes.
Add the stock, bring to boil and then simmer for 8-10 minutes.
Transfer to a bowl, add basil leaves and blend. I have blended it directly in the pans before using a hand blender, and ruined my pans!!
Pour the mixture back into the pan, add black pepper/chilli sauce and stir.
Taste and adjust seasoning.
Pour into bowls, garnish and serve piping hot with fresh bread or on its own. Last picture shows it served with 1/4 tsp. of chilli oil added. It really works, try it sometimes.
