Mung Bean Sprout Vada

This simple vada is tasty and nutritious. You can make it fat free in a steam fryer or fry it in oil like any other vadas or pakoras. Grow your own sprouts, the shop bought ones are not suitable for this dish, they are grown for too long. The ones in the photo have been cooked in a Fat Free Fryer, but you can make them on a griddle or deep fry them in hot oil.

Ingredients

  • 2 cups mung bean or moth beans sprouts

  • 2 full tsp. Bengal gram flour or besan (also known as chickpea flour)

  • 1 small onion, peeled and finely chopped

  • 1 full tsp. chopped or grated ginger

  • 1-2 green chillies (to taste) finely chopped

  • 1-2 tbsp. chopped coriander leaves

Instructions

  1. Steam beans in pressure cooker for a couple of minutes. Or steam them in a microwave on full power, for 3-4 minutes.

  2. Cool and grind to a smooth paste.

  3. Add all other ingredients.

  4. Make small balls (flat balls if using oil free fryer)with wetted or oiled palms.

  5. Cook in oil free fryer for 15 minutes. Alternatively, fry on a griddle or tava, or deep fry in hot oil, until crisp.

  6. Serve hot with Green Mango Chutney or Tomato Ketchup or Chilli Sauce.
