Garlic butter is easy to make at home, especially if you have a mini food processor. Apart from making Galic Bread, it can be used to top casseroles, fish dishes, grilled meats, cooked vegetable, added to rice pilaf, sauces and a million other things.

Ingredients

  • 1 cup salted butter, softened

  • 3-4 cloves of garlic

  • Optional; any one of the following can also be added

  • A handful of herb of choice, like Parsley, chives or tarragon, cleaned and roughly chopped

  • Coarse black pepper or chilli flakes

  • Finely sliced spring onion

  • Lemon juice, especially when using on grilled fish

Instructions

  1. Place everything in the chopper and switch on for a couple of minutes, until smooth and everything is mixed.

  2. Place in a butter dish or ramekin. You can also let it set a little and then roll into a cylinder, using wax paper. This makes it easier to slice into discs, to top cooked fish, steaks or other things.

  3. If you do not have a food processor, you can add finely grated garlic and finely chopped herbs to the softened (not melted) butter, beating it in well into the butter.
