Egg Paratha 2 Topped With Egg

Egg topped parathas make a delicious and filling meal on their own. I sometimes make egg ParathasStuffed with Scrambled Eggs, but these ones where egg layer is on top of the parathas, are easier to make. You can make fresh parathas or use pre-prepared or leftover ones. In pictures here, I have made it with a Cauliflower Stuffed Paratha as a base, but you can use Plain Paratha, or even ready made one, topped with beaten egg mix. Recipe here gives amounts for one paratha.
Ingredients
1 plain or stuffed paratha
1 small egg
Salt and pepper to taste
1 level tbsp. chopped red onion
1/4 fresh green or red chilli, chopped finely; adjust to taste. You can use chilli flakes instead.
Oil or ghee (clarified butter) for frying
Instructions
Beat one egg.
Add Salt and pepper to taste.
Add chopped onion and green chilli.
Heat a tava or frying pan and coat it with a thin film of oil.
Place the paratha on the pan and fry it for a minute on each side to heat it well.
Pour the beaten egg on top of the paratha, cover with a lid (this helps the egg to set faster) and cook on medium heat. If it cooks too fast, the paratha will burn, without the egg getting a chance to set.
Serve hot, on its own or with a Pickle and Chutney of choice.
Notes
You can make egg parathas with egg on both sides too. Pour half the egg on one side. Once that sets, turn over and pour the remaining half on the other side. Cook the same way as the first side.
