Coleslaw is a delicious cabbage salad that can be made in many different ways. This is another easy example. You can other things to it, for example pomegranate pearls, chopped red onion, walnuts etc., but I prefer it at its simplest. Makes enough for 10 servings.
Ingredients
1/4 Savoy or other fresh and crisp cabbage, very finely shredded
1 medium carrot, peeled and grated
1 red apple, grated with skin on, to give colour
Optional; other ingredients as mentioned in introduction
Dressing:
1 tsp. freshly roasted and coarsely ground cumin seeds
1/4 tsp. flaked chillies/chilli flakes, adjust to taste. A little bit of heat is good.
1 tsp. rock/sea salt
Juice of half to one lemon/lime, adjust to taste
Instructions
Place all ingredients except lime juice in a bowl.
Squeeze lime juice on top.
Stir, taste and adjust seasoning and lime juice.
Keep in fridge in an airtight container.
