Stuffed Peppers 7 With Paneer Cheese

Green peppers, also known as capsicum or bell peppers are a tasty addition to any meal. In this easy recipe, I have stuffed them with grated paneer, because I had a block of paneer, but you can use mashed paneer, if you have fresh, home made paneer. If you are making it hot for yourself, but also have people who do not eat chillies, make a few different coloured ones for them without chillies. Here I have used finger peppers. If you have large peppers, you can stuff halved peppers. This makes them easier to serve.

Ingredients
10 mixed peppers
For the Stuffing:
100-125 gm. Paneer, grated or mashed
1 tsp. roasted and coarsely ground cumin seeds
1 1/2 tsp ground coriander seeds
1 tsp. salt, adjust to taste
1 tsp. coarsely ground chilli or chilli powder, adjust to taste. You can add chopped green chillies instead
1 medium sized tomato, chopped finely
Optional ingredients
1 tbsp. chopped coriander leaves
1 tsp. grated ginger root
For cooking:
3-4 tbsp. mustard or other cooking oil
Instructions
Slit peppers along one side.
Place grated paneer, salt, chillies, ground coriander, cumin and tomato. If adding ginger and fresh coriander leaves, add them too. Mix thoroughly.
Divide into 10 portions.
Fill the chillies and line them on an oven tray.
Heat oven to 200?C or 400? F or Gas mark 6-7.
Drizzle a little oil on top of each pepper and the rest around them.
Cook uncovered for 40-50 minutes.
Serve as part of an Indian meal. They can also be served cold as part of a buffet, but taste nicer hot, straight from the oven.
