Spicy Carrot, Apple & Onion Salad

Grated carrots are used in all kinds of salads. Here I have mixed them with grated dessert apples. If you use cooking apples, omit lemon juice, they are tart enough. Quantities of carrots and apples are approximate.

To retain crispness, try making it not too long before serving.

Serves 4

Ingredients

  • 3-4 carrots

  • 2 dessert apples

  • 1 red or other fresh onion

  • Salt to taste*

  • 1 tsp roasted cumin, coarsely ground*

  • 1/2 tsp. chilli flakes or thinly sliced green chillies

  • Juice of 1 lemon/to tast

  • *You can use Chat Masala, instead of these two.

Instructions

  1. Top and tail and peel carrots.

  2. Slice and core apples, no need to peel. Sprinkle a little salt on apples immediately, this will stop discolouration.

  3. Top, tail and peel the onion.

  4. Grate apple and carrots with same sized grater.

  5. Grate or finely chop onion.

  6. Place in a bowl, add cumin, salt, chillies and mix gently. (you can use chaat masala instead of these)

  7. Add lemon juice to taste.

  8. Adjust seasoning. Keep in a bowl with cling film or an airtight container.

  9. Serve chilled.

Notes

  • You can add a teaspoon full of finely chopped coriander leaves, if you wish.

  • You can add Chat Masala in place of salt, chilli and roast cumin.
