Courgette and Red Pepper Bhaji/Sabji Curry

This simple curry can be made with or without onions. If you do not want to use onions, simply omit the step where onions are added, and continue with ginger alone. Tomatoes are also optional. If you do not have them, use a little lemon juice or Amchoor (mago powder) to give slight tartness to the dish. Serves 4 as part of a meal

Ingredients

  • 3-4 medium courgettes

  • 1 medium onion (optional)

  • 1/2 red pepper for colour (optional)

  • 2 medium sized tomatoes

  • 1-2 tbsp. chopped/sliced/grated ginger

  • 1 tsp. chopped/sliced/grated garlic

  • 1 tbsp. oil

  • 1 tsp.carom seeds (you can use cumin or mustard seeds

  • A pinch of asafoetida/hing

  • 1/2 tsp. turmeric powder

  • 1 tsp. coriander powder

  • Chilli powder to taste

  • Salt to taste, roughly 1 tsp.

  • 1/2 tsp Garam Masala

  • Chopped spring onion greens (optional)

Instructions

  1. Top and tail and slice courgettes, about 1/2 thick. If they are fresh, you do not need to peel them.

  2. Peel and chop/grate ginger and garlic.

  3. Peel and slice onions thinly.

  4. Chop tomatoes into small chunks.

  5. Heat oil in a pan, add carom seeds and asafoetida. Once seeds crackle, add onions and ginger and garlic, fry until lightly browned.

  6. Add the courgettes, spices and salt. Stir fry for a minute.

  7. Add tomatoes and stir them in.

  8. Cover, turn heat down to medium and cook until courgettes are nearly cooked. They should not be too soggy.

  9. Adjust seasoning and add garam masala. Turn heat off.

  10. Serve with Chapatties or Plain Paratha.
