Tofu Stir-Fried with Onions

Tofu is made by coagulating the Soya milk, somewhat similar to making Paneer by curdling the cow?s or buffalo milk with lemon/vinegar/yoghurt. It is extremely versatile, just like paneer. Here is a simple, quick way of making a side dish.
Serves 2
Ingredients
1 cup. silken tofu, cut into cubes
1 cup sliced onions
2 tbsp. vegetable oil (or 1 tbsp. any cooking oil 1 tbsp. sesame oil)
1-2 clove garlic, chopped/shredded
Tofu marinade;
1-2 tbsp. light Soya sauce
1 tsp. chilli sauce or chilli oil, adjust to taste
1 tablespoon corn-starch
Salt to taste, if needed
Optional additions
2 tbsp. skinless, unsalted, roasted peanuts
*You can add a seasonal vegetable like chopped green beans, pok hoi, broccoli etc. to the onions at the end of step 4
Instructions
Press out moisture from tofu by pressing it gently under a heavy plate. Cut into 1-inch cubes.
Mix all marinade ingredients in a bowl, roll tofu gently in it and leave aside for 15-20 minutes.
Heat oil in a pan, add and stir-fry garlic for a minute or so.
Add onions and fry until lightly browned. Take out with a slotted spoon and keep aside*.
Heat the wok again and add tofu cubes. Stir-fry until lightly golden.
Add pre-fried onions and stir them in.
If using peanuts, add and stir them in now.
Transfer to a serving bowl and serve hot with rice or noodles.
