Fat Free Tomato, Carrot and Leek Soup

This is one of many fat free soups that I make for lunch, especially when I am trying to lose some weight. It is easy, tasty and nutritious. Quantities of vegetables are approximate only. It can be made a day in advance and re-heated before serving.
Serves 4-6
Ingredients
2-3 medium carrots, peeled and roughly chopped
2 average sized leeks, roughly chopped (You can add 1 large onion, if you do not have leeks)
1 tin of tomatoes (you can use fresh tomatoes, but remove skin first by dunking them in boiling water for a couple of minutes)
1 small piece of ginger, peeled and roughly chopped
1 green chilli (optional)
1 sprig of basil (Tulsi) or a handful of coriander leaves
1 litre water
Salt and freshly ground pepper to taste or 2 level tbsp. vegetable stock granules.
Instructions
Place everything, except basil/coriander leaves and seasoning and stock granules/cubes, in a pressure cooker and cook under full pressure for 2-3 minutes.
Cool, open pressure cooker.
Add basil/coriander leaves, salt and pepper and the stock granules. Blend until smooth.
I keep it thick, so that it is filling, but thin it to your liking.
Taste and add and adjust seasoning as needed.
Reheat to just before boiling and serve.
