Fat Free Mixed Vegetable Curry

This dish can be made with a mix of vegetables or with any single vegetable of your choice. In the picture here, I have topped it with a fish fillet to make a complete meal, but you can keep it vegetarian and serve with a small naan or 1 small cup of rice. I started making this when I was trying 2:5 (two day fast and 5 day normal food) eating plan.

Serve 4-6

Ingredients

  • 500 gm. mix of vegetables of choice (Cauliflower, leek, tomatoes, spinach, carrots, green beans etc.)

  • 1 1/2 tsp. cumin seeds, dry roasted

  • 2 bay leaves (optional)

  • 225 gm. or 1 large onion, peeled and sliced or chopped

  • 1/2 inch piece of ginger, peeled and grated

  • 2-3 cloves garlic, peeled and grated (optional)

  • 1/2 tsp. turmeric powder

  • 1 tsp. coriander powder

  • 1/4 tsp. chilli powder or to taste

  • Salt to taste

  • 1/2-1 cup water

  • 1/2 tsp. Garam Masala

  • A handful of chopped coriander leaves

Instructions

  1. Heat a wok or pan.

  2. Add all vegetables, spices, except garam masala, salt and water.

  3. Add garam masala and coriander leaves, mix gently and cover.

  4. Bring to boil and simmer gently until vegetables are tender.

  5. Serve hot with a fresh Chapatti or a small Nan or a small Pitta Bread or a small cup of Boiled Rice.

  6. In the picture here, I have added a couple of fish fillets to the top of the curry. Allow them to cook for 5 minutes and then serve with the curry. If you are making it as a low calorie diet plan, you do not need rice or chapatti etc. when you serve it with fish or meat fillet.
