Chocolate and Fresh Fruit Microwave Cake

This simple cake is made in a microwave oven in minutes. It is specially for people who only have access to a micvorwave oven. Here I have added some cocoa powder, chopped dark chocolate and a fresh peach. Experiment with other flavours and ingredients like raisins, orange/lemon peel, apple, plum etc.

Ingredients

  • 60 gm. (2 oz.) butter at room temperature

  • 60 gm. (2 oz.) caster/fine sugar (reduce to 75 gm. if you want it less sweet)

  • 60 gm. (2 oz.) Self Raising Flour

  • 1 standard sized egg at room temperature

  • 2 tbsp. milk

  • 2 tbsp. golden syrup or honey

  • 1 full tsp. cocoa powder

  • 1-2 squares of chocolate, chopped into small pieces.

Instructions

  1. Butter a microwave suitable bowl/cake tin and keep aside.

  2. Cream butter and sugar together with an electric beater or whisk, until light and creamy.

  3. Beat in the egg, milk and honey, until smooth.

  4. Sift in flour, cocoa powder and add chocolate chips. Fold them in gently.

  5. Place a sliced fruit of choice at the base of a buttered dish.

  6. Pour over the cake batter on top.

  7. Cook on full power (around 800) for 3.5-4 minutes.

  8. Test with a skewer inserted into the cake. If it is cooked, the skewer will come out clean. Otherwise, cook for a further minute or so.

  9. Let it stand for a 5-6 minutes and then gently ease it off onto a plate.

  10. Serve hot or cold.
