Garlic Bread

Before the days of ready-made garlic bread becoming available at every supermarket, before the days when we were all told not to eat too much butter and before the days of pounds piling up on me , in the late seventies and early eighties, I used to make this bread frequently. I did not bake my own bread in those days, just used fresh bread from my local baker. Now of course I tend to make my own bread beforehand.
Ingredients
1 large loaf of bread
1/2 of a stick of butter (125 gm. approximately at room temperature
6-8 cloves of garlic, peeled and mashed or finely grated
1 full tbsp. of herb of choice like rosemary or parsley, finely chopped (optional)
Aluminium foil
Instructions
Preheat oven to 200 C or 400F. or Gas Mark 6
Slice the bread carefully, ensuring that you don't slice quite through to the bottom.
Beat butter and garlic together, adding any herb, if used.
then gently force the butter between the slices (this will be messy, but it's well worth it). Place in tha centre of a foil large enough to wrap around the bread. Pull edges in covering the bread completely..
Place on a baking tray and bake for about 20 minutes.
Now just open the top of the foil and cook for another 5 minutes, to brown the top.
Serve immediately.
