Oatmeal Pancakes (Savoury or Sweet), Very Low Fat

Fat Free Rolled Oats Pancakes

This is a recipe from my late brother in-law Aviash. He used to make it for breakfast. It is easy to make and tasty.

Makes 6 pancakes

Ingredients

  • 1 cup rolled oats/oatmeal

  • 1 cup fat free cottage cheese (thick yoghurt works too)

  • 1 cup egg whites (3 whole eggs work too)

  • 1/2 tsp. salt, to taste

  • Toppings

  • 1/2 cup red onions, finely chopped

  • 1-2 green chillies, finely chopped

  • Optional topping

  • 1 tomatoes, de-seeded and finely chopped

  • 1 tbsp. coriander leaves, finely chopped

  • Alternative sweet pancake

  • Add blueberries or other berries or chopped peaches/apples/other fruits, in place of onions, chillies etc. Add a little calorie free sweetener to the batter in place of salt.

Instructions

  1. Place oats in a blender and blend to almost smooth.

  2. Add remaining ingredients except toppings and blend to a dropping consistency. If too think, add a little fat free milk or water.

  3. Heat a non-stick pan.

  4. Spray or lightly spread it with oil. Wipe excessive oil with a tissue.

  5. Ladle mixture (1 ladle) onto it. Spread it around a little by tilting the pan.

  6. Sprinkle over the topping of choice.

  7. Cook covered on low to medium heat.

  8. Turn over when bubbles appear.

  9. Cook the other side for a couple of minutes. Serve hot, with topping side up. Savoury ones can be served with Tomato Ketchup and Green Mango Chutney. Sweet ones can be served with low fat, low sugar vanilla yoghurt or syrup (syrup will add calories).
