Chocolate Layered Burfi in a Microwave (Indian Milk Sweet)
Badam aur Chocolate ki Barfi, Microwave Version
Mamta Gupta
I make this quick and easy burfi in a microwave, using milk powder. Many versions of this recipe exist on the world wide web. For my microwave of 800 power, this is what worked best.
Makes about 20-25
Ingredients
2 cups or 200 gm. milk Powder-I used Sainsbury’s skimmed milk powder
1 cup ground almond (dry)
300 ml carton of double or heavy cream that is used for whipping
1/2 cup ground or fine sugar (I used caster sugar). Reduce amount if you want burfi to be less sweet
1 tbsp. chocolate/cocoa powder
A large microwave proof bowl
A greased/lined flat tray, like a burfi tray or Swiss roll tray
Instructions
Line a tray with greased paper. This makes lifting out burfies at the end easier.
Place all ingredients except chocolate powder in a bowl and mix well.
Cook on full power for 3 minutes.
Remove from microwave and stir well. Cook for a further 2 minutes. The mix fluffs up.
Stir well and pour 2/3rd of the mixture onto the greased and line tray.
Spread it out evenly. I find that my greased palm works best. If you are fast, or if you cover it with a greased paper, it spread evenly better and faster.
Sieve in the cocoa powder onto the remaining 1/3rd of the mixture in the bowl and stir it in well until smooth. Sieving removes any lumps from the cocoa powder.
Pour on top of the first layer. Even it out again by flattening it through a grease proof paper or aluminium foil.
Make cuts into it, either diamonds or squares. Leave it to cool.
Once cool and set, separate the diamonds/squares using a food knife. Box in keep sealed.
Any broken pieces can be cut into smaller squares or triangle r made into laddoos or balls.
