Sesame Prawn Toast

Sesame seeds prawn toasts are probably one of the most popular orders in a Chinese restaurant. They are quite easy to make and taste much better when made at home. They make a tasty addition to cocktail parties and buffest. Serve with Steve?s Chilli Sauce or Margaret?s Chilli Sauce (there are otrher chilli sauce recipes on this site.

Makes starters for 2-4

Ingredients

  • 200 gm. fresh peeled (uncooked) prawns

  • 2 spring onions finely chopped

  • 1 red/green chilli

  • 1/2 tsp. garlic purée (finely chopped)

  • 1/2 tsp. ginger purée (finely chopped)

  • 1/2 tsp. white pepper

  • 1/2 tsp. salt (you might prefer a little more than me)

  • 1/2 tsp. Chinese 5 spice

  • 2 tbsp. sesame oil

  • 50 gm. (3 full tbsp.) white sesame seeds (about 35 gm. or 2 full tbsp. for the prawn mix and 15 gm. or 1 tbsp. for the topping

  • 4 slices of white bread (brown if you like)

  • Oil for frying (use one of veg/sunflower/rapeseed/olive oil)

Instructions

  1. Pat dry prawns with a kitchen towel.

  2. Place in a food processor and add spring onions, chillies, ginger, garlic, white pepper, salt and Chinese 5 spice mix.

  3. Add 35 gm./2 tbsp. sesame seeds and the sesame oil.

  4. Blend until smooth. If it starts forming balls, add a little more sesame oil to thin it out just a little.

  5. Cut bread slices into manageable sizes, triangles or finger, and spread one side with the mix, about 1/2 cm. thick.

  6. Sprinkle over the saved sesame seeds and press down with hand gently.

  7. Shallow fry in a frying pan, putting the prawn mix side down first, until golden brown.

  8. Then turn over and fry the other side.

  9. Drain excess oil on kitchen paper and serve hot!

Notes

  • If you are after something a little lower in calories you can follow the same method but instead of frying them, spray a baking sheet with a oil, place the 'toasts' on top, mix side up, and then give them another spray on top. Cook in a hot oven (180C/350F/Gas mark4) until golden brown. They are pretty good, but not quite as good as fried.

  • These toasts are full of flavour as they are. However, some people add 1 tsp. of Soya sauce and one beaten egg to this mix for additional flavour and to make them easier to be deep fried, which is handy if you are making large numbers for a party.
