A Quick & Easy Chicken (or Meat) Curry in a Pressure Cooker

This recipe may have a long list of ingredients, but it is one of the easiest curries to make. One day, when I was feeling too lazy to cook, I just put everything together and cooked it for a few minutes in a pressure cooker. My husband thought that it was quite tasty.

It is for people who don?t want/have too much time to spend in the kitchen but like good food. Other meats, beans can also be cooked this way. You can follow this method in in a slow cooker as well.

Ingredients

  • 8-10 pieces of chicken drumsticks/thigh mixed

  • 2 tbsp. oil of your choice

  • A small piece or two of cassia/cinnamon

  • 2 brown cardamoms

  • 1 tsp. cumin seeds

  • Masala Mix

  • 3 medium sized onions (350-400 gm. total weight)

  • 300-400 gm. chopped tomato carton or tin (or use fresh)

  • 2 cloves of garlic

  • A small piece, about 1 inch, ginger

  • 2 full tsp. coriander powder

  • 1 tsp. turmeric

  • 1 tsp. cumin powder

  • 1/2 tsp. (to taste) chilli powder

  • Salt to taste

  • Optional extras for the masala mix for that ‘ extra special flavour. Use all or whatever you have.

  • 1/4 tsp. black pepper

  • 1 tsp. carom seeds or ajwain

  • 1 tsp. ground mustard seeds (use Coleman’s if you don’t have it)

  • 1 tsp. dry methi leaves (kasoori methi)

  • A little grated nutmeg

  • 1 tsp. cardamom powder

  • 1/2 tsp. cinnamon powder

  • 1/2 tsp. clove powder

  • A large pinch of asafoetida resin (hing)

  • For garnish

  • A handful of chopped coriander leaves

Instructions

  1. Remove skin from chicken pieces.

  2. Peel onion, ginger and garlic.

  3. Place onions, ginger and garlic, all of masala mix spices and salt (plus optional extras if used) in a food processor and blend to make a paste.

  4. Now heat oil in a pressure cooker and add cumin seeds and whole spices.

  5. When cumin seeds crackle, add chicken pieces and spice mix. Stir fry for a minute or two.

  6. Add 1-2 cups water, according to you taste, and cook under pressure for 5 minutes.

  7. Let the pressure cooker cool down slowly. This will allow the chicken to cook a little more.

  8. Open the cooker, adjust seasoning, add coriander leaves and serve with Chapatties and Boiled Rice.
