Thai Salad Dressing

This dressing is very tasty on a mix of thinly sliced/julienned cucumbers and boiled and cooled, thin rice noodles. Serve chilled.
Ingredients
2 tbsp. lime or lemon Juice
1 1/2 tsp. fish sauce
1 tsp. honey or soft brown sugar
2 tsp. malt vinegar
2 tbsp. extra virgin olive oil
1/2 tsp. sesame oil, if you have any
2 tbsp. coarsely ground, roasted peanuts
1 tbsp. coriander leaves, minced or very, very finely chopped
1 tbsp. basil leaves, minced or very finely chopped
1 red chilli, de-seeded and very finely chopped or
2/3 to 1 tsp. freshly ground rock salt, to taste
Instructions
Place all ingredients in a jar, tightly close the lid and shake to mix.
Serve on any salad.
