Thai Salad Dressing

Thai Salad Dressing

This dressing is very tasty on a mix of thinly sliced/julienned cucumbers and boiled and cooled, thin rice noodles. Srve cold

Ingredients

  • 2 tbsp. lime or lemon Juice

  • 1 1/2 tsp. fish sauce

  • 1 tsp. honey or soft brown sugar

  • 2 tsp. malt vinegar

  • 2 tbsp. extra virgin olive oil

  • 1/2 tsp. sesame oil, if you have any

  • 2 tbsp. coarsely ground, roasted peanuts

  • 1 tbsp. coriander leaves, minced or very, very finely chopped

  • 1 tbsp. basil leaves, minced or very finely chopped

  • 1 red chilli, de-seeded and very finely chopped or

  • 2/3 to 1 tsp. freshly ground rock salt, to taste

Instructions

  1. Place all ingredients in a jar, tightly close the lid and shake to mix.

  2. Serve on any salad.
