Peperami Pasta, Quick

Want a home cooked meal and you have nothing in, the main shops are shut and the only thing meaty is a Peperami (long life sausages in a packet) snack? Make this simple dish from you cupboard ingredients. It is tasty and it takes only as long as it does to boil the pasta! You could add garlic and extras like parsley, peppers (capsicum), cream cheese etc., this is just the basic recipe.

Serves 1

Ingredients

  • 125 gm. dried pasta (follow packet instructions for cooking)

  • 1 peperami snack (ordinary size) sliced/chopped into thin pieces (other salamies could be used)

  • 1 white onion - finely diced

  • 2 spring onions - finely sliced

  • 1 tbsp. plain flour

  • 1 coffee mug milk

  • 15 gm. Parmigiano Reggiano or Parmesan cheese, finely grated

  • Salt and pepper to taste

  • Olive oil for frying

  • 1 ladle of water from cooking the pasta

Instructions

  1. Put the pasta on to cook according to instructions on the packet.

  2. While that is going gently fry the peperami (or similar salamis) in a large pan

  3. Add the white onion and soften.

  4. Add the flour and mix in well.

  5. Stir in the milk, mix in well and cook, creating a white sauce.

  6. Add the grated cheese and mix in.

  7. Add the spring onions and mix them in.

  8. Stir well as the sauce thickens.

  9. Add the cooked and drained pasta.

  10. Add a ladle of the pasta water, if it looks too thick.

  11. Season to taste with salt and pepper.

  12. Serve hot.
