Mixed Berries Compote with Cinnamon and Vanilla

Fruit compote is basically fruit cooked with or without spices until it is soft, but not mashed to a pulp. It can be served chilled or warm, with ice-cream or thick yoghurt or cream. Here I have used 3 summer berries, so I guess it is a summer dessert! You can use frozen berries or other, different berries.

Ingredients

  • 1 full cup of raspberries

  • 1 full cup of strawberries

  • 1 full cup of blueberries

  • 1/2 tsp. vanilla concentrate or a vanilla pod (not bottled essence)

  • 3 tbsp. honey (or use brown sugar to taste)

  • 1 cinnamon or cassia stick

  • A little lemon juice

  • To serve:

  • Ice-cream or thick yoghurt or cream

  • Few leaves of mint

Instructions

  1. Hull and wash berries.

  2. Place berries, sugar/honey, cinnamon and vanilla in a bowl. Cover with cling film and leave in the fridge for a few hours.

  3. Heat a heavy pan*.

  4. Add fruit and cook on low for a few minute. Instead of stirring, shake the pan a little. This way, you will not break the berries too much.

  5. Squeeze lemon juice on top and stir very gently, to mix it in.

  6. Transfer to a serving bowl, cover with a cling-film and chill completely in the fridge.

  7. Serve cold, with yoghurt or cream or ice-cream or cr?me fra?che and a couple of mint leaves as decoration.

  8. You can blend this mix with yoghurt, a little water and ice to make a refreshing drink.

Notes

  • If the liquid/juices become too watery, remove fruit. Cool the liquid, beat in 2 tsp. corn flour and then cook stirring, until it becomes a thick sauce. Cool and pour back over the cooked berries.Mix gently.

  • In winter months, make it from a packet of frozen mixed berries and serve it warm. You can also add a spoon or two of a liquor of choice.

  • You can also make it with peach, plums and other summer fruits.
