Coriander and Chilli Chicken

Though south American (we had it , this dish could so easily be Indian. It is easy to make, requires very basic ingredients and it is delicious.
Serves 4
Ingredients
2 large or 3 medium chicken breasts, boneless, weight around 700 gm.
1 tbsp. butter
1 tbsp. olive oil
1 medium sized onion, finely chopped
2 cloves of garlic, thinly sliced
2-3 green chillies (to taste), finely sliced
1 1/2 tbsp. rock salt
A good sprinkling of freshly ground black pepper
A bunch of fresh coriander leaves, washed and roughly chopped (about 1 cup)
Instructions
Cut chicken breast into bite sized pieces. This is easy to do if you partly freeze the chicken.
Melt butter and oil together in a wok.
Fry onion, garlic and green chillies, until onions are soft.
Add chicken, salt and pepper. Stir fry on high for a few minutes, until chicken is nearly cooked.
Add coriander leaves and stir them in.
Cook on medium heat until chicken is cooked through.
Serve hot with plain fried rice and salad or with vegetables of choice or with Naan type of bread.
Other options: 1) Add a little cumin powder. 2)Add 1/2 tsp. of chilli flakes. If you do this, reduce green chillies, or it will get too hot. 3) Add a little Garam Masala at the end. 4)Add a squeeze of fresh lemon juice.
