Oven Roasted Tomatoes With Fresh Basil

These simple tomatoes are delicious as a side dish with grilled meat or fish, on a slice of crusty bread. You can insert a clove of garlic in each tomato too, for extra flavour. If you do not have an oven, you can cook them under a grill or even in a frying pan, on low-medium heat. You can roast tomatoes this way with a garlic clove inserted, instead of basil. Other vegetables can also be roasted this way, see last two pictures.

Ingredients

  • 2 medium tomatoes per person

  • 3-4 fresh basil (Tulsi) leaves

  • 3-4 tbsp. olive oil of good quality (Extra Virgin)

  • Coarse salt Freshly ground black pepper

  • Optional

  • 1 garlic clove per tomato

  • A sprinkle some sugar gives better better caramelisation

  • A few drops of good quality of balsamic vinegar on each tomato

Instructions

  1. Preheat the oven to 200?C (15?C less in a fan oven) or 400?F or Gas mark 6.

  2. Wash tomatoes and towel dry.

  3. Make a ?cross? slit halfway into each tomato. Insert a garlic clove, if used, into the slit of each tomato. Now insert a few basil leaves into each tomato.

  4. Place tomatoes on an oiled, oven dish.

  5. Drizzle with olive oil generously.

  6. Sprinkle with salt and pepper (and sugar, if used).

  7. Cook in a hot oven until the skins shrivel, flesh softens and they look a little browned. This will take around 40 minutes.

  8. Serve hot or cold.
