Cabbage and Yellow/Bell Pepper/Capsicum Stir-Fry

Contrary to popular belief, all Indian dishes are not spicy. Here is a simple stir-fry with only salt and pepper. You can of course temper it (tarka) with a handful of mustard seeds and a few curry leaves, even add a few green chillies or a little grated coconut. But do not ruin it by adding spices. Serves 4-6
Ingredients
3 cups finely shredded cabbage of any type
1 yellow (green or red) pepper, finely chopped
1 tbsp. oil
Salt to taste
Optional, to be added to hot oil before adding cabbage
1 tsp. black mustard seeds or rai
8-10 curry leaves, not bay leaves
1-2 green chillies, slit lengthwise, adjust to taste
1 tsp-. black mustard seeds or rai
3 tbsp. grated coconut
Instructions
Heat oil in a karahi or wok.
If using optional ingredients, add mustard seeds. Once they crackle, add chillies, and curry leaves and stir
Add shredded cabbage, yellow pepper and salt.
Stir, cover and cook, frying frequently, until slightly cooked. It should still retain its crunch and not be soggy.
Turn heat off. If using coconut, sprinkle it on top, stir.
Serve hot with Plain Paratha or a roast meat/poultry meal.
