Steamed Butternut Squash with Stilton Cheese

This year (2016), I planted squash for the first time and I was quite late doing this. Though I had loads of flowers, which we enjoyed in salads and as battered pakoras (bhajias), I only had one, rather small squash, before the plant died of frost! It was really too small to make anything with it. So I decided to make it with cheese and as I only had Stilton at the time, I filled some in the cavity and grilled it. Eaten hot, it was really tasty, a simple yet delicious dish to make. You could add a few chopped onions and green chillies underneath the Stilton. Or, you could try different cheeses. I am sure that even some brown sugar and butter will taste very nice, once it melts and oozes into the flesh. If you don?t have small squashes, you could use slices of a large one or even pumpkin slices. Serves 2
Ingredients
1 small squash
2 tbs. grated stilton Cheese
Instructions
Slice squash into half.
Remove and discard seeds.
Place in a microwave steamer and cook for 4-5 minutes. Remove and allow to coll.
Fill cavity with cheese.
Just before serving, place under a hot grill and cook until cheese bubbles. Serve immediately, either as a vegetarian starter, or as part of a main meal.
