Spicy Fried Chicken

We all fancy some spicy fried chicken as finger food from time to time and this is the way to have it, without having to go out! It is made using Steve?s Secret Spice Mix. It gives a similar taste to the well known KFC (Kentucky Fried chicken) chicken, which of course is their own closely guarded secret recipe. This recipe will serve 2-4 people, depending on what it is served with and how hungry everyone is.

Note from MamtaTry this recipe with left-over turkey, after Christmas.

  1. I have used skinned chicken breast here, but you can use any part of chicken you like/prefer. Leave the skin on, if you prefer. Chop chicken into chunks/drumsticks, finger food sized pieces.

  2. Place chicken in a bowl, sprinkle the spice mix on top and toss gently. Coating should stick well to the fresh chicken.

  3. Heat oil in a frying pan and shallow fry chicken pieces for about 5 minutes, turning over on all sides.

  4. Place in a large roasting tray/dish and give a little extra sprinkle of the spice/flour mix.

  5. Now place in a medium hot oven (about 200?C, 400?F Gas mark 6) for 15-20 minutes, until evenly golden brown.

  6. If you want to deep fry the chicken instead, this mix can be made into a batter by adding an egg and some water! Dip chicken pieces into batter and deep fry until golden brown.

  7. Serve hot, on their own or with chips.
