Spicy Fried Chicken Masala Mix

We all fancy some spicy fried chicken as finger food from time to time. This mix is my secret recipe (until now!), which will help you to make it at home, without going out and at a fraction of the cost! Though not American, it is similar to the well known KFC (Kentucky Fried Chicken), which of course is a closely guarded recipe. This is my version of it. The recipe looks complicated, a lot of spices in it, but it is only really a case of throwing them in the blender/grinder and grinding them together. It stores well. It can be used for other fried foods too. Once done it should be enough for 4 or 5 batches of 4 servings each.
Ingredients
2 tsp. cumin seeds
2 star anise
2 tsp. coriander powder
2 tsp. dried oregano
1 tsp. ginger powder
2 tsp. onion granules/powder/flakes (not onion salt)
1/2 tsp. cinnamon powder
4 tsp. fennel seeds
1 tsp. peppercorn
2 tsp. smoked paprika
3 tsp. rosemary
2 tsp. thyme
2 tsp. garlic powder (not salt)
2 tsp. dried garlic
2 tsp. fenugreek powder
6 tsp. celery salt
2 tsp. dried mint
2 tsp. sea salt
400 gm. plain flour
Instructions
Place all the spices in a small grinder/blender and grind until it is a fine powder.
Add the flour and mix well
Place the flour/spice mix in a clean, dry, air tight container to store. It should last for a month or two.
Use about 50 gm. of this mix per 750 gm. of chicken (roughly 4 breasts)
