Roasted Sweet-Potatoes, Whole Or Halved

This is a simple yet delicious way of cooking sweet potatoes and it is definitely worth a try. They can be cooked in an oven and then served with BBQ. Sweet potatoes are good for diabetics (medium glycaemia index), they are rich in vitamins like A and C and minerals and have antioxidant properties. Serves 4

Ingredients

  • 4 medium sweet potatoes, 1 per person

Instructions

  1. Wash, top and tail sweet potatoes. Scrub them clean. Leave the skin on.

  2. Place on a baking tray/sheet and bake at 190-200°C or 375-400°F until they feel soft to touch and their surface is beginning to get brown. Dark blisters may appear on the surface, because sugar in them burns and caramelises.

  3. You may need to turn them over once or twice. This takes about 30-40 minutes. You may need to cook them longer, if they are bigger in size.

  4. Serve hot.
