Stir Fried Chinese Rice With Beef
Beef Stir Fry Rice

This is not an authentic recipe for a beef stir-fry in any way but it is my take on it and it does make for a decent meal! It does look like a long list of ingredients but it is just a collection of basic Indian and some Chinese spices that you throw into the blender/grinder.
Serves 4
Ingredients
400 gm. beef, cut into thin strips
400 gm. rice
1 vegetable stockpot/cube
2 star anise
5 cardamoms
Hot water
30 ml. oil for cooking (I use olive oil)
3 tbsp. Soy sauce
Vegetables
100 gm. green beans, chopped into inch pieces
100 gm. carrot, finely sliced
100 gm. red pepper/capsicum, finely sliced (roughly 1 large pepper)
200 gm. onion, 1 medium sized, finely sliced
3 garlic cloves, finely sliced/chopped
For powder mix
3 tsp. cumin seeds
1 tsp. fennel seeds
3 star anise
1 tsp. green cardamom pods
1 tsp. fenugreek powder/seeds
1/2 tsp. ginger powder
1/2 tsp. turmeric
1/2 tsp. black pepper corns
1 tsp. smoked paprika
1 tsp. celery salt, use normal sea salt if you can't get it
Instructions
First place the rice in a microwave bowl, add the stockpot/stock cube, 2 star anise and 5 cardamoms.
Then cover the rice with hot water, about 1inch (2.5cm) above the top of the rice, and cook in a microwave as per instructions (mine takes about 15minutes). You can cook rice on a stove, if you wish.
Meanwhile, place all the dry spices into a grinder/blender and grind to a powder.
Heat the oil in a pan and fry all the vegetables and garlic for about 5-10 minutes, until soft. Remove from pan and keep aside.
Remove the rice from the pan and put to one side.
Heat the pan again and add a little more oil.
Add beef and fry until the beef turns brown?ish.
Add the powdered spice mix and stir in for a few minutes until nicely coated.
Add back the fried vegetables and stir in.
Add the rice, with its whole spices picked out, and stir into the meat and vegetable mix.
Add the soy sauce, stir it in.
Serve at once.
