Halloumi Kebab Sandwich

Halloumi is a traditional Cypriot cheese, which is robust enough to take being grilled/griddled and fried without melting all over. It is often used on the BBQ and served in pittas, on a plate with other grilled meats or part of a meze. Serves 1-2.

Ingredients

  • 2 pitta breads

  • 200 gm Halloumi cheese (nothing except maybe Indian Paneer cheese will do)

  • 2 tbsp. Extra virgin olive oil

  • 1 garlic clove finely chopped

  • 1/2 tsp. dried oregano

  • 1/2 tsp freshly cracked black pepper

  • Juice of half a lemon

  • No salt, as Halloumi is a salty cheese

  • Salad leaves of your choice

  • Cucumber, sliced

  • 1 tomato, sliced

  • Fresh red pepper (capsicum/bell pepper), sliced into rings (if small enough)

  • 1 Red onion, sliced into rings

  • 25 ml. Tahini for dressing (you might want to use salad cream, mayo, chilli sauce etc.)

Instructions

  1. Cut the halloumi into thick slices (about 1/4 inch)

  2. Mix together the olive oil, lemon juice, garlic, oregano and pepper

  3. Marinate the Halloumi in the mixture for half an hour.

  4. Place the Halloumi on a red hot griddle pan and cook until nicely coloured on both sides. Depending on the heat of the pan, it will only take a few minutes each side so don't leave it for long.

  5. Warm the pitta breads under the grill or in the oven oe in a toaster, following manufacturers instructions.

  6. Slice the top edge of the pitta off (much easier than trying to slice down into it) and put in a little salad, some slices of cucumber, tomato and red peppers.

  7. Add the cheese and some more salad building up until its nice and full.

  8. Serve with the dressing on one side or you could add it as you are building it up.

  10. Here you can see it served with small new potatoes that have been parboiled then oven roasted with pepper and sea salt until nice and crispy !
