Prawns in Hot Chilli and Coriander Sauce

This delicious dish is hot and yummy, finger licking good!

Serves 4

Ingredients

  • 24 jumbo prawns, peeled (you can use ready cooked, but unooked are best)

  • 2 tsp. chilli oil, including chilli flake solid

  • 2 tbsp. sweet chilli sauce

  • 1-2 tbsp. Encona hot chilli sauce (you can use Tabasco instead))

  • 2 cloves of garlic, peeled and squeezed through a garlic press or use a good sprinkling of garlic salt

  • 1 tsp. sesame oil

  • 1 tbsp. light Soya sauce

  • A good sprinkle of freshly ground black pepper

  • 1 tbsp. chopped coriander leaves, finely chopped. You can use chopped chives instead.

Instructions

  1. Place all marinade ingredients in a bowl and mix well. Taste and adjust, adding more of any of the sauces as you need.

  2. Add prawns and fold them in the sauce. You can prepare this dish in advance and leave it in the fridge, in an airtight container. Leave in the fridge for a few hours. This helps for flavours to steep in.

  3. Serve on a bed of finely shredded lettuce or any other type of green salad of choice..
