Blueberries and Cheese Salad with a Spicy Vinaigrette Dressing

This is quite a refreshing salad, especially nice when serve with a fresh, crisp bread roll of bread stick. Many different types of cheeses can be used. You can add other fruits like strawberries, grapes, cubed pears, redcurrants, raspberries etc.
Serves 2 as a main course and 4-6 as a starter.
Ingredients
Salad
200 gm. of Halloumi cheese/goat cheese /paneer cheese /Stilton or other blue cheese cut into bite sized cubes
1 punnet of fresh blueberries (150-200 gm.)
1/2 yellow or red pepper, thinly sliced or ½ red onion thinly sliced
1 green chilli, chopped (optional)
You can add a few toasted walnuts or almond flakes (optional)
Salad Leaves of choice for serving. Iceberg lettuce is crisp and nice for this dish
For the dressing
2 tbsp olive oil
2 tbsp light Balsamic vinegar
1 tsp. honey
Salt to taste You can use Chat Masala instead, for a more spicy version.
A good sprinkle of freshly ground black pepper
A good sprinkle of chilli flakes
1 tbsp. finely chopped coriander leaves or fresh chives
Instructions
Wash, drain and divide the salad leaves amongst the serving plates.
Place all other salad ingredients in a bowl and gently mix.
Place all dressing ingredients in a small jar and shake to mix well. Pour over the salad and gently fold it in, without breaking the cheese and crushing the berries
Serve immediately over the lettuce leaves.
