Blueberries and Cheese Salad with a Spicy Vinaigrette Dressing

This is quite a refreshing salad, especially nice when serve with a fresh, crisp bread roll of bread stick. Many different types of cheeses can be used. You can add other fruits like strawberries, grapes, cubed pears, redcurrants, raspberries etc.

Serves 2 as a main course and 4-6 as a starter.

Ingredients

  • Salad

  • 200 gm. of Halloumi cheese/goat cheese /paneer cheese /Stilton or other blue cheese cut into bite sized cubes

  • 1 punnet of fresh blueberries (150-200 gm.)

  • 1/2 yellow or red pepper, thinly sliced or ½ red onion thinly sliced

  • 1 green chilli, chopped (optional)

  • You can add a few toasted walnuts or almond flakes (optional)

  • Salad Leaves of choice for serving. Iceberg lettuce is crisp and nice for this dish

  • For the dressing

  • 2 tbsp olive oil

  • 2 tbsp light Balsamic vinegar

  • 1 tsp. honey

  • Salt to taste You can use Chat Masala instead, for a more spicy version.

  • A good sprinkle of freshly ground black pepper

  • A good sprinkle of chilli flakes

  • 1 tbsp. finely chopped coriander leaves or fresh chives

Instructions

  1. Wash, drain and divide the salad leaves amongst the serving plates.

  2. Place all other salad ingredients in a bowl and gently mix.

  3. Place all dressing ingredients in a small jar and shake to mix well. Pour over the salad and gently fold it in, without breaking the cheese and crushing the berries

  4. Serve immediately over the lettuce leaves.
