Grilled or Pan-fried Red Snapper Fillets

This simple recipe can be used to make any type of filleted fish. Buy fresh fish and get you fishmonger to fillet it. If you like fish soup, save the head/tail etc. to make fish stock. You can use any herbs/spices of choice instead of what I have given below. Even salt and pepper is okay. Serves 2.

  • 2 fillets from a good sized red snapper or other fish

  • 1 full tsp. of mixed herbs (I use dry from a jar)

  • A good sprinkling of coarse chilli/flakes

  • Freshly ground rock salt, to taste

  • A good sprinkling of garlic salt (or use � tsp garlic pur�e)

  • 1 lime or lemon, cut into half


  1. Clean and towel dry fish fillets.

  2. Mix herbs, chillies, salt and garlic salt.

  3. Sprinkle on top of the fish fillets. Leave aside until you are ready to serve.

  4. Heat a little oil in a pan and fry fish for 4 minutes on each side. Do not overcook.

  5. Serve with half a lime and salad/vegetables/rice of choice. Fish tastes good with lime juice.
