Plain Paratha Made from Leftover or Ready-made Chapatties

These parathas bring back memories. When I was young girl in a boarding school in Rajasthan, leftover chapatties were served as parathas. They were delicious and only those people who got to the mess early got them!

These parathas are well known to most north Indian households. For those of you who are too busy to make fresh parathas, or those of who can't make them/roll them out, all you need is a supply of some ready-made chapatties and some oil, nothing could be easier. These days, you can buy frozen or vacuum packed chapatties at most Indian grocers.

Ingredients

  • Ready made or leftover or pre-cooked frozen chapatties

  • Oil for pan frying

Instructions

  1. Heat a tawa or griddle.

  2. Spread a thin layer of oil.

  3. Place one chapatti on the griddle.

  4. Shallow fry on both sides, brushing each side with oil and gently pressing with a laddle, until crisp. It is important to keep heat on low medium, specially if you are using shop bought Chapatties to make them. They should be crisp and served straight off the griddle, with any curry of your choice. I happen to love them with Rasedar Aloo, a potato curry.
