Cucumber and Red Onion Sweet Salad

This is a simple, crispy salad, which can be served with either and Indian meal or any other type of meat/fish/chicken meal.
Ingredients
1 large cucumber or 2-3 gherkin type small (Indian) cucumbers
1 tsp. salt
1 small or 1/2 medium sized red onion
1-2 fresh green chillies, finely sliced
2 level tbsp. sugar or equivalent sweetener
1 tbsp. light balsamic or wine or good quality malt vinegar
1 tbsp. olive oil
A good sprinkle of freshly ground black pepper
Salt to taste (taste the salt in cucumber, before adding any more.)
A few broken up green coriander leaves
Optional: pickled olives/cherry tomatoes/1 medium tomato, de-seeded and finely chopped
Instructions
Peel and grate coarsely.
Sprinkle with salt and leave aside for 30 minutes. Then squeeze gently to get excessive water out, without crushing the cucumber too much.
Chop the onion finely and add to cucumber, along with green chillies and coriander leaves. Save a few coriander leaves for garnish.
Place vinegar, oil, sugar, black pepper and salt if needed in a small jar and shake to mix.
Pour over cucumbers and onion, mix gently.
You may serve it garnished with olives/cherry tomatoes or finely chopped tomatoes.
