Tomato Chutney for Bottling

Make this chutney when tomatoes are cheap. It is good with savoury snacks and in sandwiches.

Ingredients

  • 1 kg. ripe tomatoes

  • 2 medium onions (300 gm. approximately)

  • 100-150 gm. dark sugar or jaggery/gur

  • 100 ml. malt vinegar

  • 1 dessert spoon salt (adjust to taste)

  • 1 tsp. chilli powder or coarsely ground chillies(adjust to taste)

  • 1 tsp. Garam Masala

Instructions

  1. Wash and chop the tomatoes into 1 inch pieces.

  2. Peel and chop onions finely.

  3. Place the tomatoes, onions, salt, paprika, cayenne and vinegar, cook gently for 45 minutes or until it begins to thicken.

  4. Add sugar and stir until sugar is dissolved. Continue simmering, until the mixture becomes thick like jam, stirring from time to time.

  5. Allow to cool slightly.

  6. Transfer to sterilized jars, close lids and turn jars up-side down to create a good vacuum/seal.

  7. This chutney tastes better after 2-3 weeks, as it matures.
