Courgette Parcels or Rolls

I have grown courgettes successfully for the last couple of years. This year I had rather a lot and I was looking for recipe ideas. You can use many variations of fillings, depending upon what you have in the fridge. You could even use paneer cheese, which will need addition of some more flavourings, bring quite bland in itself. Makes 10-12
You can make these rolls with any vegetable that can be sliced thinly and rolled, e.g., slices of long aubergine/brinjals, griddled with a little olive oil, slices of raw cucumber, mooli radish, carrots etc., etc.

Ingredients
2 courgettes
2 tbsp. olive oil for cooking
Filling Ingredients
150 gm. feta cheese, crumbled. Other types of cheese can be used.
1 small red onion, peeled and finely chopped
1 medium tomato, de-seeded and finely chopped
1-2 green chillies (to taste), finely sliced/chopped
Salt to taste (remember, feta is also salted)
1/2 tsp. coarsely ground black pepper
1/4 tsp. chilli flakes
A tbsp. of chopped coriander leaves or any other herb of choice (optional)
1 tbsp. olive oil
Instructions
Preheat oven to 225? C or 450? F.
Wash and slice courgettes lengthways thinly. I find a sharp potato peeler or a cheese slicer very useful for this.
Dip in boiling water for 10 seconds, take out and dip in cold water. Drain. This is done to stop them cooking further in their own steam. They should not be soggy.
Allow to drain fully, spread on a towel to dry out.
Mix all stuffing ingredients in a bowl, adjust seasoning to taste.
Oil an aluminium lined tray with a little of the olive oil.
Dip each slice of courgette in oil, make into a circle/ring, holding its edges with a cocktail stick. Place on the oiled tray. Continue until all slices have been rolled in this way.
Divide the filling into same number of portions as your courgette rolls and 'spoon in' the filling into each roll.
Bake for 10-12 minutes in a preheated oven at 200C/400F, until cheese begins to turn brown on top.
Lift out gently onto a platter and serve hot or cold.
