Marinade Selection

Here is a minute collection of marinades for meat, chicken, fish, vegetables and even Paneer Cheese that I use with minor variations. There are hundreds more you can make by simply adding what spices/herbs you have.

Ingredients
All marinade ingredients mixed together. If you like a smooth marinade, you can blend them together quickly.
Instructions
A Simple Marinade
2 tbsp. vinegar
1 heaped tbsp. finely grated fresh ginger
1 tbsp. ground/finely grated/crushed garlic
1 1/2 tsp. salt, adjust to taste
1 tsp crushed pepper
A quick, easy and Hot marinade (enough for about a kg. of prawns/chicken/meat
2 tbsp. chilli oil with solids (for it's smoky flavour)
1 tbsp. chilli sauce(adjust heat of chillies to taste)
2 tbsp. malt vinegar
2 tbsp. light Soya sauce
2 tbsp. finely chopped chives
1 tsp. garlic granules
1 tsp. ginger powder
Chinese Type Marinade
Cloves off a whole bulb of garlic, peeled and squeezed through a garlic press
2 tsp. salt
1 tbsp. sherry
2-3 tbsp. light Soya sauce
A good sprinkle of freshly ground black pepper
Coriander and Cumin Marinade
2 tbsp. Olive oil
2 tbsp. chopped coriander leaves
2 tbsp. lime juice
1 tsp. roast cumin, coarsely ground
1 tsp. paprika
1 tsp crushed black pepper
2 cloves garlic, crushed/grated
1 tsp salt, adjust to taste
Dijon Mustard Marinade
2 tbsp. whole grain Dijon mustard
4 cloves of garlic, crushed/grated
2 tbsp. fresh or 1 tbsp. dry Dill or a herb of choice
1 tbsp. salt (adjust to taste)
2-3 tbsp. lemon/lime juice or
2-3 tbsp. olive or other oil
Ginger Marinade
1 tbs. grated root ginger
1 tbsp. grated/crushed garlic
1 tbsp. Garam Masala
Juice of a lemon or 2 tbsp. vinegar
Salt to taste
Hot Marinade for Prawns or Fish or chicken 1, from John Young
2 tbsp. light Soya sauce
3-4 tbsp. hot chilli sauce like Encona or similar
1/2 cup tbsp. tomato ketchup
A good sprinkle of freshly ground black pepper
1 tbsp. sugar or honey
2 tbsp. olive or sesame oil
Marinade for Prawns or Fish or chicken 2
2 cloves of garlic, peeled and crushed well
1/2 level tsp. turmeric powder
2-3 tbsp. lemon juice
Salt to taste
1/2 tsp crushed red chillies
Marinade for Prawns or Fish or Chicken 3
4-6 cloves garlic, peeled and finely grated or crushed
A good sprinkling of salt and freshly ground black pepper
Juice of 1 lime
A little olive oil
Marinade for Prawn or Fish or Chicken 4:
3 tbsp. fresh lemon juice or white wine vinegar
1 inch piece of ginger, peeled and grated finely
1-2 green chillies, chopped finely
4 large cloves of garlic, peeled and crushed or finely grated
A handful of coriander leaves, chopped finely
Salt to taste
2 tbsp. olive or other oil
2 tbsp. semolina (optional)
Marinade for vegetables, from Szechuan province in China
2 tbsp. peanut oil
2 tbsp. sesame oil
3-4 tbsp. coriander powder
2 tsp. salt
1 tsp. chilli powder (adjust to taste)
3-4 tbsp. white sesame seeds
1-2 tbsp. light Soya sauce
Spicy Yoghurt marinade (Tikka Marinade for chicken or Meat)
1 small pot or 1 cup of natural yoghurt
Salt to taste
1 tbsp. coriander powder
1 tbsp. turmeric powder (optional)
1/2 tsp. or to taste, chilli powder
2 tsp. sweet paprika, for colour
3-4 cloves garlic, peeled and grated or ground
1 inch piece of ginger, peeled and finely grated or ground
1 small onion, peeled and grated
1 tsp. Garam Masala
2 tbsp. cooking oil
Tandoori Masala Marinade:
3-4 cloves garlic, peeled
1 inch piece or 1 tbsp. grated ginger, peeled
2 heaped tsp. of Garam Masala
Flesh of 1 lime or lemon, rind and pips removed
3-4 green or red chillies (less or more as desired), stalk removed
1/2 bunch fresh coriander leaves (optional)
A few strands of saffron (optional)
2 tbsp. cooking oil
Salt to taste
1 tsp. paprika powder for colour (optional)
A small carton (150 ml.) of thick yoghurt1 tbsp. plain flour
1 tsp. cumin seeds
blend everything together.
Tomato Ketchup Marinade
3-4 tbsp. tomato ketchup
1 tbsp. Worcestershire sauce
2 tbsp. Soya sauce
2 tbsp. American mustard paste or whole grain mustard or any other mild mustard paste
1 tsp. chillies, coarsely ground (optional) or Tabasco sauce or any chilli sauce of choice, adjust to your taste
A sprinkle of black pepper
Salt, only if marinade is not salty enough
