Here is a minute collection of marinades for meat, chicken, fish, vegetables and even Paneer Cheese that I use with minor variations. There are hundreds more you can make by simply adding what spices/herbs you have.

Ingredients

  • All marinade ingredients mixed together. If you like a smooth marinade, you can blend them together quickly.

Instructions

  1. A Simple Marinade

  2. 2 tbsp. vinegar

  3. 1 heaped tbsp. finely grated fresh ginger

  4. 1 tbsp. ground/finely grated/crushed garlic

  5. 1 1/2 tsp. salt, adjust to taste

  6. 1 tsp crushed pepper

  7. A quick, easy and Hot marinade (enough for about a kg. of prawns/chicken/meat

  8. 2 tbsp. chilli oil with solids (for it's smoky flavour)

  9. 1 tbsp. chilli sauce(adjust heat of chillies to taste)

  10. 2 tbsp. malt vinegar

  11. 2 tbsp. light Soya sauce

  12. 2 tbsp. finely chopped chives

  13. 1 tsp. garlic granules

  14. 1 tsp. ginger powder

  15. Chinese Type Marinade

  16. Cloves off a whole bulb of garlic, peeled and squeezed through a garlic press

  17. 2 tsp. salt

  18. 1 tbsp. sherry

  19. 2-3 tbsp. light Soya sauce

  20. A good sprinkle of freshly ground black pepper

  21. Coriander and Cumin Marinade

  22. 2 tbsp. Olive oil

  23. 2 tbsp. chopped coriander leaves

  24. 2 tbsp. lime juice

  25. 1 tsp. roast cumin, coarsely ground

  26. 1 tsp. paprika

  27. 1 tsp crushed black pepper

  28. 2 cloves garlic, crushed/grated

  29. 1 tsp salt, adjust to taste

  30. Dijon Mustard Marinade

  31. 2 tbsp. whole grain Dijon mustard

  32. 4 cloves of garlic, crushed/grated

  33. 2 tbsp. fresh or 1 tbsp. dry Dill or a herb of choice

  34. 1 tbsp. salt (adjust to taste)

  35. 2-3 tbsp. lemon/lime juice or

  36. 2-3 tbsp. olive or other oil

  37. Ginger Marinade

  38. 1 tbs. grated root ginger

  39. 1 tbsp. grated/crushed garlic

  40. 1 tbsp. Garam Masala

  41. Juice of a lemon or 2 tbsp. vinegar

  42. Salt to taste

  43. Hot Marinade for Prawns or Fish or chicken 1, from John Young

  44. 2 tbsp. light Soya sauce

  45. 3-4 tbsp. hot chilli sauce like Encona or similar

  46. 1/2 cup tbsp. tomato ketchup

  47. A good sprinkle of freshly ground black pepper

  48. 1 tbsp. sugar or honey

  49. 2 tbsp. olive or sesame oil

  50. Marinade for Prawns or Fish or chicken 2

  51. 2 cloves of garlic, peeled and crushed well

  52. 1/2 level tsp. turmeric powder

  53. 2-3 tbsp. lemon juice

  54. Salt to taste

  55. 1/2 tsp crushed red chillies

  56. Marinade for Prawns or Fish or Chicken 3

  57. 4-6 cloves garlic, peeled and finely grated or crushed

  58. A good sprinkling of salt and freshly ground black pepper

  59. Juice of 1 lime

  60. A little olive oil

  61. Marinade for Prawn or Fish or Chicken 4:

  62. 3 tbsp. fresh lemon juice or white wine vinegar

  63. 1 inch piece of ginger, peeled and grated finely

  64. 1-2 green chillies, chopped finely

  65. 4 large cloves of garlic, peeled and crushed or finely grated

  66. A handful of coriander leaves, chopped finely

  67. Salt to taste

  68. 2 tbsp. olive or other oil

  69. 2 tbsp. semolina (optional)

  70. Marinade for vegetables, from Szechuan province in China

  71. 2 tbsp. peanut oil

  72. 2 tbsp. sesame oil

  73. 3-4 tbsp. coriander powder

  74. 2 tsp. salt

  75. 1 tsp. chilli powder (adjust to taste)

  76. 3-4 tbsp. white sesame seeds

  77. 1-2 tbsp. light Soya sauce

  78. Spicy Yoghurt marinade (Tikka Marinade for chicken or Meat)

  79. 1 small pot or 1 cup of natural yoghurt

  80. Salt to taste

  81. 1 tbsp. coriander powder

  82. 1 tbsp. turmeric powder (optional)

  83. 1/2 tsp. or to taste, chilli powder

  84. 2 tsp. sweet paprika, for colour

  85. 3-4 cloves garlic, peeled and grated or ground

  86. 1 inch piece of ginger, peeled and finely grated or ground

  87. 1 small onion, peeled and grated

  88. 1 tsp. Garam Masala

  89. 2 tbsp. cooking oil

  90. Tandoori Masala Marinade:

  91. 3-4 cloves garlic, peeled

  92. 1 inch piece or 1 tbsp. grated ginger, peeled

  93. 2 heaped tsp. of Garam Masala

  94. Flesh of 1 lime or lemon, rind and pips removed

  95. 3-4 green or red chillies (less or more as desired), stalk removed

  96. 1/2 bunch fresh coriander leaves (optional)

  97. A few strands of saffron (optional)

  98. 2 tbsp. cooking oil

  99. Salt to taste

  100. 1 tsp. paprika powder for colour (optional)

  101. A small carton (150 ml.) of thick yoghurt1 tbsp. plain flour

  102. 1 tsp. cumin seeds

  103. blend everything together.

  104. Tomato Ketchup Marinade

  105. 3-4 tbsp. tomato ketchup

  106. 1 tbsp. Worcestershire sauce

  107. 2 tbsp. Soya sauce

  108. 2 tbsp. American mustard paste or whole grain mustard or any other mild mustard paste

  109. 1 tsp. chillies, coarsely ground (optional) or Tabasco sauce or any chilli sauce of choice, adjust to your taste

  110. A sprinkle of black pepper

  111. Salt, only if marinade is not salty enough
