Cucumber, Yellow/Red Pepper, Onion and Mint Raita (Yoghurt)

Kheera, Shimla Mirch Pyaz aur Pudine ka Raita

This is another simple, yet delicious raita to make. Serves 4-6

Ingredients

  • 2 cups natural yoghurt

  • 2 tbsp. or a handful of fresh mint leaves, pureed in a processor (or chop very finely)

  • 1 small red onion, peeled and finely chopped

  • 1 medium yellow or red pepper (Bell pepper or capsicum)

  • 1/2 cup finely chopped cucumber (kheera or kakri)

  • 1-2 green chillies, finely chopped

  • Salt to taste

  • 1/2 tsp. coarsely ground roast cumin seeds.

  • Few mint leaves to garnish

Instructions

  1. Peel yellow/red pepper with a tomato peeler. If you don't have one, soak pepper in boiling water for 3-4 minutes and then peel the skin off. You can leave the skin intact, if you wish.

  2. Place all ingredients together in a large bowl, except the mint leaves for garnish, mix and transfer to a serving bowl.

  3. Garnish with mint leaves.

  4. Serve chilled.
