Mango Powder Chutney/Sauce

Amchoor is an integral part of Indian vegetarian cooking. It is made by grinding dry slices of raw mangoes. Amchoor is generally used to give many Indian vegetarian dishes a little tartness. This sort of chutney is usually made from whole, dry mango slices. This recipe is based on just such a recipe by Mrs. Maya Sen see Mango Slice Chutney.

Ingredients

  • 100 gm. amchoor (dry mango powder)

  • 200 gm. jaggery (Gur). Dark brown or Muscovado sugar can be used

  • 1-2 tsp. cooking oil

  • 1 tsp. cumin seeds

  • A good pinch of asafetida powder

  • 1 tsp. chilli powder

  • 2-3 tsp. salt, adjust to taste

  • 1 tsp. garam masala

  • 1 tsp. dry ginger powder

  • 1 tsp. black Salt (Kala namak) . This salt adds to the flavour of a chutney. You can use ordinary salt.

Instructions

  1. Make a thin paste of amchoor powder with water.

  2. Heat oil in a pan.

  3. Add cumin seeds and asafoetida powder. As soon as seeds splutter, add all other ingredients.

  4. Mix, bring to boil and simmer for a few minutes.

  5. Taste and adjust salt, chillies and sweetness.

  6. Allow to cool and bottle. This should keep for a few weeks in a fridge.

Notes

  • You can add a little of finely chopped coriander or mint leaves before serving.
