Cabbage Bhaji/Sabji 6, Low Spiced

Note from Mamta (2012): This simple, tasty, low calorie recipe comes from my mum's younger sister late Mrs. Rukmani Garg.

Serves 4.

Ingredients

  • 3 cups finely shredded cabbage of any type

  • 2 green chillies, slit lengthways

  • 1 tbsp. oil

  • 1 tsp. mustard/rai or cumin seeds

  • A pinch of asafoetida powder

  • A pinch of turmeric powder (just a hint of yellow).

  • Salt to taste

  • Juice of half a lemon or 1 medium tomato, chopped

Instructions

  1. Wash and shred cabbage.

  2. Heat oil in a karahi or wok.

  3. Add mustard/cumin seeds and asafoetida powder.

  4. When the seeds splutter, add shredded cabbage, turmeric and salt.

  5. Stir, cover and cook for a few minutes. The cabbage should remain crisp, not turn soggy.

  6. Sprinkle and stir in lemon juice. If adding tomatoes, add now and stir fry for a few minutes.

  7. Serve hot with as part of an Indian meal or simpky with Plain Parathas .
