Mung Dal (Green Gram) Pakora Snack

This is a quick and easy vegetarian snack, specially suitable for cold evenings. Serve as a starter or with tea/coffee as a snack. You can make these with Mung dal chilka (with skin) too.

Serves 4

They can be added to a a simple curry sauce, to make a tasty curry.

Ingredients

  • 1/2 cup moong dal dhuli (skinless mung beans or green gram dal)

  • Salt to taste

  • 1 onion chopped (optional)

  • 1 heaped tsp. grated ginger (optional)

  • 1-2 green chillies chopped or use chilli flakes

  • 1/2 tsp. Garam Masala

  • 1/2 tsp. carom (ajwain) or cumin (jeera) seeds

  • A pinch of asafoetida or hing powder

  • Oil for deep frying

Instructions

  1. Wash and then soak dal for 2 hours.

  2. Grind in a blender with enough water to get a fine, grainy batter of 'dropping' consistency.

  3. Add and mix all other ingredients except oil.

  4. Heat oil in a karahi or wok to just under smoking point.

  5. Drop dollops of dal batter into the oil carefully, so as not to splash hot oil.

  6. Fry on medium heat, turning over a few times, until crisp and golden on all side. Don't fry in very hot oil, otherwise the inside will not cook properly

  7. Take out and drain on kitchen paper.

  8. Serve immediately, pipping hot, with a Green Mango Chutney or

  9. Imli Chutney or Tomato Ketchup.
