Griddled Scallops

This is a simple and quick starter, suitable for serving with rocket salad or shredded lettuce leaves.

Serves 4

Ingredients

  • 12 scallops with coral, 3 scallops per person

  • Marinade

  • A sprinkling of salt and freshly ground black pepper

  • 2 cloves garlic, peeled and finely grated or crushed

  • A little olive oil

  • Juice of 1 lime

  • To serve

  • A handful of Rocket salad leaves or any shredded lettuce for each of 4 the servings.

  • 4 wedges of lime.

Instructions

  1. Place scallops and marinade ingredients in a bowl, mix and leave for an hour or so. They can be left for longer in the fridge.

  2. Just before serving, prepare plates with 1/4th of the lettuce on each plate.

  3. Preheat a griddle and lightly oil it.

  4. Add to the hot griddle pan and cook for 30 seconds to a minute on each side, turning gently with tongs. They should be a little firm to touch and opaque when cut.

  5. Arrange the scallops on top of lettuce leaves, garnish with lime wedge and serve immediately

  6. You can serve chilli sauce or Tabasco as a dipping sauce with it.
