Green Banana Bhaji/Sabji 1, Mrs. Rastogi's

Kachche Kele ki Sookhi Sabji 1

Vinodini Rastogi

This is an easy and tasty dish, not too rich on spices. The bananas should be completely green and firm, otherwise the curry will become sweetish. Serves 4.

  • 500 gm. Green bananas

  • 1-2 tbsp. mustard oil

  • 1 level tsp. methi/fenugreek seeds

  • 1 broken red chilli

  • 1/2 tsp. turmeric powder

  • 1-1 1/2 tsp. salt, adjusted to taste

  • 1 tsp. coriander powder (optional)

  • 1/4 tsp. chilli powder

  1. Wash, top and tail bananas.

  2. Score the skin along each banana's entire length, in vertical lines, using a sharp knife. The groves thus created should be about 2 mm. apart, almost like zesting a lemon.

  3. Slice thickly into about 1-1 1/2 cm. thick slices. Each slice includes a circle of the skin around it.

  4. Heat oil. Add fenugreek seeds and broken up chilli.

  5. Add banana, turmeric, coriander powder, salt and chilli powder. Stir fry for a few seconds, to mix the spices with bananas, lower heat, cover and cook until tender. Stir from time to time.

  6. Squeeze a little lemon on top and serve hot with Plain Paratha or Chapatties and a dal or a curry.
