Sweet Sattu

Sattu is an acquired taste. It is made from a coarse flour made from dry roasted grains of various types. It is difficult to give it an English name that makes sense, being a unique dish from Bihar province of India only. This sattu flour is made from dry roasted red lentil (dhuli masoor dal). The dal is not easy to roast at home and is generally bought ready roasted and ground. Sattu is said to have cooling effect in hot summers. It does not require cooking. The amount given below is for one person or one portion.

Ingredients

  • 1 tbs. chana sattu (dry roasted, Bengal gram, skinless)

  • Milk, enough to make a custard like consistency, warmed (not hot)

  • 1 tsp. or more sugar or equivalent sweetener

  • 1/2 tsp. green cardamom powder or crushed seeds

  • A few chopped cashews/almonds/pistachios

  • 10-12 resins

Instructions

  1. Place sattu and all other ingredients in a bowl.

  2. Add warm milk and stir with a fork until no lumps remain.

  3. Serve chilled.
