Sattu is an acquired taste. It is made from a coarse flour made from dry roasted grains of various types. It is difficult to give it an English name that makes sense, being a unique dish from Bihar province of India only. This sattu flour is made from dry roasted red lentil (dhuli masoor dal). The dal is not easy to roast at home and is generally bought ready roasted and ground. sattu is said to have cooling effect in hot summers. It does not require cooking.

Serves 1

Ingredients

  • 1 heaped tbsp. Sattu flour made from Masoor dal (red lentil)

  • 1 tbsp. finely chopped red onion

  • 1 tbsp. finely chopped mint leaves

  • 1 tbsp. finely chopped coriander leaves

  • 1/4 tsp. coarsely ground roast cumin seeds

  • 1/2 green chilli, finely chopped

  • Salt to taste

  • Water as required

Instructions

  1. Place all ingredients, except water, in a bowl and mix with a fork, stirring well so that no lumps remain.

  2. Add a little water to bind it, if necessary. The end result should be a firmly bound, semi solid, but not firm, dough like mix.

  3. Transfer to a bowl and garnish with coriander leaves, if desired.

  4. Serve with any meal or even as part of an Indian breakfast.
